Mixed Berry Oat Waffles



For once I was craving something other than chocolate or peanut butter waffles, so I whipped up this fruity fella 🙌 I still drizzled some chocolate over top though, oops 🤷‍♂️ These are super easy to make and can be topped with any berries you like! Feeling pancakes? You can make those instead with this same recipe 😉


Ingredients:


Waffles:

½ cup (60g) @terrasoul organic rolled oats (blended/processed into oat flour)

1/2 banana, mashed (about 60g)

50g water (can sub any milk instead)

1 @vitalfarms pasture-raised egg

1/2 tsp baking powder

1/4 tsp pure vanilla extract

5-10g @lakanto monk fruit, optional (can also use stevia, coconut sugar, cane sugar, etc.)


Toppings:

60g @simpletruth4u organic strawberries

60g @simpletruth4u organic blueberries

85g @stonyfield organic whole milk yogurt, plain or vanilla (can sub 36g @so_delicious cocowhip for same calories and dairy-free option, or any other whipped cream)

15g @lvlsusa unflavored collagen peptides, optional (mix into yogurt/cocowhip)

10g chocolate syrup, optional (can sub maple syrup or honey)

5g @terrasoul organic cacao nibs, optional


Instructions:

  1. Place all waffle ingredients into a blender or food processor and mix until thoroughly combined

  2. Cook waffles/pancakes over medium heat until golden brown and top with your toppings of choice

  3. Enjoy!
