Grain-Free Breakfast Burritos



What better way to start your morning than a tasty breakfast burrito (or tacos)? Eggs, bacon, and cheese all nested perfectly in a gluten-free tortilla sounds like a winner in my book šŸ¤·ā€ā™‚ļø Want to meal prep? Just make these ahead of time and freeze them! Give this one a try, what are you waiting for? ;)


Ingredients:

1 large or 2 small grain-free tortillas @sietefoods

2-3 pastured eggs @vitalfarms

2-4oz pastured bacon or sausage @applegate

1-2oz organic cheese of choice @raw_farm_by_op

Organic refried beans, avocado, or guacamole (optional)

Salsa, green chiles, peppers, and onions (optional)


Instructions:

1. Add your meat to a cold skillet, then place on your burner and turn to medium-high heat

2. Allow the meat to cook to about your desired doneness, then reduce the heat to low

3. Add in your eggs and scramble until the eggs are just set

4. Remove the eggs/meat from the pan and heat your tortilla(s) in the pan for 10-15 seconds per side, or until warm and pliable

5. Once the tortilla(s) are heated, assemble your burrito or tacos with the egg/meat mixture, cheese, and any other toppings you like. If making a burrito, turn the heat in your pan back up to medium-high. Wrap the burrito and place seam side down in the pan. 6. Allow to turn golden brown on the bottom, then flip and repeat on the other side. Remove from the pan and enjoy!
