Biscuits & Sausage Gravy (Gluten-Free)



If you don’t have biscuits and gravy in your breakfast arsenal, you’re really missing out 🤷‍♂️ But when you make it at home, you can use better-for-you ingredients AND you can add as much sausage as you like 😏 And trust me, you definitely don’t want to skimp on the sausage!


Ingredients:


Biscuits: (can use store-bought biscuits, if desired)

2 cups gluten-free all-purpose flour

1 cup organic whole milk (can sub dairy-free milk)

½ cup unsalted butter, cold

1 tbsp baking powder

2 tbsp honey (can sub coconut, date, brown, or cane sugar)

¾ tsp unrefined salt

½ tsp baking soda

1 tbsp melted butter or honey, optional (to glaze top of biscuits)


Gravy:

1 lb ground pork sausage (can sub ground turkey)

¼ cup gluten-free all-purpose flour (can sub cassava flour)

2 ½ cups organic whole milk (can sub dairy-free milk)

2 tbsp butter

2 tsp coconut or date sugar, optional (can sub honey)

¾ tsp unrefined salt

½ tsp black pepper

½ tsp dried sage

1/4 teaspoon dried thyme

1/4 teaspoon dried crushed rosemary

1/8 teaspoon red pepper flakes (optional)


Directions:

1. Preheat your oven to 425F. Line a baking sheet with parchment paper/baking mat

2. In a large mixing bowl, combine flour, baking powder/soda, and salt. Then, incorporate the cold butter. Add milk of choice and stir until a soft, flaky dough forms

3. On a floured surface, roll the dough out into a 1 1/4-inch thick rectangle. Cut out 6-8 rounds with biscuit or cookie cutter. Place the biscuits on the baking sheet and place in the freezer for 10-15 minutes

4. Preheat a large skillet or saucepan to medium heat

5. Remove the biscuits from the freezer and brush the tops with melted butter or honey (if using). Place the biscuits into the oven and bake for about 12-16 minutes, or until golden brown

6. While the biscuits are baking, add your sausage to the pan (once preheated). Cook until browned and remove excess grease, if desired

7. Add flour and cook with the sausage for 2 minutes. Then, add the seasonings, butter, sugar (if using), and milk. Cook on medium until thickened. Add more milk, as needed

8. Remove biscuits from the oven when golden, serve with your sausage gravy, and enjoy!
