Zoodles & Grass-Fed Meatballs



Craving that pasta dinner, but don’t want to be bogged down by too many carbs? Give this low-carb recipe a try! Packed with protein, plenty of vegetables, and healthy fats, you can’t go wrong with this one! 🙌


Ingredients:

2 tbsp @chosenfoods avocado oil

2-3 medium zucchinis or yellow squash, spiralized or cut into long, thin strips

1 lb @whiteoakpastures grass-fed ground beef

2 @vitalfarms pasture-raised eggs

1 tsp Italian seasoning

1/2 tsp @redmondrealsalt unrefined salt

1/2 tsp garlic powder

1/4 tsp black pepper

5oz @organicvalley Parmesan cheese, grated

1 1/2 cups @simpletruth4u organic pasta sauce

2 tbsp @luciniitalia extra virgin olive oil, for drizzling


Instructions:

1. Preheat 2 large skillets over medium-high heat

2. Form your meatballs by mixing the ground beef, seasonings, eggs, and 1oz Parmesan cheese in a mixing bowl. Roll the mixture into small balls

3. Once hot, add 1 tbsp avocado oil and vegetable noodles to one pan. Season with salt and pepper, to taste. To the other pan, add 1 tbsp avocado oil and your meatballs. Cook for 6-8 minutes, stirring occasionally (both pans)

4. Once the meatballs and noodles are done cooking, combine them into one pan. Add your pasta sauce and cook for an additional 1-2 minutes, or until everything is combined and heated through

5. Garnish with the remaining 4oz Parmesan cheese and drizzle with olive oil. Enjoy!!
