Buffalo Chicken Meatballs



You might think you’ve tried all the balls of meat, but if you haven’t tried these juicy and spicy balls, then you’re missing out 🤷‍♂️ Serve with some ranch or blue cheese and you got yourself a winning combo 👌


Ingredients:


Meatballs:

1 lb organic ground chicken

¼ cup (60ml) milk of choice

½ cup (56g) gluten-free breadcrumbs

1 pasture-raised egg

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

¾ tsp unrefined salt

¼ tsp black pepper


Buffalo sauce:

¼ cup grass-fed butter or ghee

½ cup hot sauce of choice

¾ tsp garlic powder

1/8 tsp xanthan gum (optional)


Instructions:

1. Preheat your oven to 400F

2. Mix all meatball ingredients in a mixing bowl until well combined, then form into small balls

3. Add the balls to a baking sheet lined with parchment or a silicone baking mat and bake for about 15 minutes (flipping halfway through), or until cooked to 165F

4. While the meatballs bake, prepare the sauce by adding all the ingredients into a saucepan over medium heat. Whisk all the ingredients together and cook until heated through. Keep on low heat until the meatballs are finished baking

5. Remove the meatballs from the oven, toss in the buffalo sauce, and enjoy!
