Easy Chicken Pad Thai (Gluten-Free)



Every now and again you crave takeout, but maybe you don’t want all the junk and low-quality ingredients that most takeout places are going to give you. This chicken pad thai is super easy to make and packs a serious flavor punch too. What’s not to like about pad thai? 🤪


Ingredients:


Base:

4 oz brown rice pad thai noodles @thaikitchen

1 lb organic chicken breast or thigh, cut into small pieces @bellandevans

1 bag frozen stir fry veggies (no sauce added)


Sauce:

4 tbsp gluten-free hoisin sauce @sanjtamari

2 tbsp creamy peanut butter @georgiagrinders

2 tbsp organic ketchup @primalkitchenfoods

4 tsp coconut aminos @coconutsecretofficial (can sub soy sauce)

4 tsp hot sauce of choice @cholulahotsauce

2 tsp apple cider vinegar @bragg


Instructions:

1. Prepare the sauce by mixing all the sauce ingredients together in a small mixing bowl. Set aside

2. Preheat a large skillet over medium heat and a saucepan or pot filled with water over high heat. While the pans are preheating, sauté, steam, or microwave your vegetables until fully cooked and heated through. Set aside

3. Once the pans are preheated, add your chicken into the skillet (with a little bit of avocado oil, if desired) and season with salt and pepper. Additionally, add your noodles to the pot of boiling water

4. Continue cooking and stirring each until the chicken and noodles are both cooked through. Make sure not to overcook either

5. Drain the noodles, then add them to the pan with the chicken. Pour the sauce on top. Turn the heat to low and continue cooking and mixing everything together for about 2 more minutes

6. Remove from the heat, serve, and enjoy!
