Ingredients:
1lb @smartchicken_official organic chicken tenders, breasts, or thighs, cut into strips or chunks
2 @vitalfarms pasture-raised eggs
Ā¼ cup (37g) @bobsredmill gluten-free all-purpose flour (can cub cassava or oat flour)
ā cup (68g) @porqsnacks pork panko breadcrumbs
1 tsp unrefined salt
1 tsp paprika
3/4 tsp garlic powder
Ā½ tsp onion powder
Ā½ tsp black pepper
@chosenfoods avocado oil (optional, for extra crispiness)
Instructions:
1. Preheat the oven to 400F
2. Arrange three shallow bowls, one with the flour, one with the beaten eggs, and one with the breadcrumbs and seasonings (make sure to mix well)
3. Dredge each piece of chicken in the flour (shaking off any excess), then into the egg (shaking off any excess), and finally into the breadcrumb mixture. Then, place the breaded chicken onto a baking sheet (lined with parchment paper or a baking mat, if desired) and spray the outside with avocado oil, if desired
4. Bake the breaded chicken for 12-14 minutes, flipping halfway through, until cooked to approximately 165F. Remove from the oven, serve with your favorite dipping sauce, and enjoy!
