Super Fudgy Date Brownies



Looking for a delicious dessert made with real, wholesome ingredients that won’t weigh you down? Look no further than these fellas. Sweetened naturally, these brownies are both delicious and guilt-free. I promise you won’t be disappointed!


Ingredients:

1 cup (227g) organic pitted dates

1 ½ cups hot water

2 pasture-raised eggs

2 teaspoons vanilla extract

1/2 cup (120g) unrefined coconut oil or softened grass-fed butter

1/2 cup (74g) gluten-free all-purpose, cassava, or paleo flour

1/3 cup (32g) raw cacao powder

½ teaspoon baking soda

¼ teaspoon unrefined salt

1/3 cup (80g) dark chocolate chips


Instructions:

1. Place the dates in a bowl and pour the hot water over them. Allow the dates to soak for 10 -15 minutes

2. Preheat the oven to 350F and line an 8x8 baking dish with parchment paper

3. Drain the water from the bowl and add the dates to a food processor. Then, add the coconut oil/butter, eggs, and vanilla extract. Mix until smooth, then add your flour, cacao powder, baking soda, and salt. Pulse until combined. Then, stir in the chocolate chips and pour the batter into the baking dish (you can reserve some of the chocolate chips to place on top of the batter before baking, if desired)

4. Bake until the edges just begin to set, about 20-22 minutes. Allow the brownies to cool, then slice into pieces and enjoy! Store in the fridge for up to 4 days or freeze for up to 3 months!!
