Street Cart Chicken & Yellow Rice



First of all, I hope you’ve had the chance to try this dish. If not, do yourself a favor and make a trip to a local halal food truck! This version is packed with high-quality ingredients, giving your body the fuel it needs to do something awesome 😏


Ingredients:


Chicken:

1 lb organic chicken thighs (boneless and skinless)

1 tsp dried oregano

¾ tsp ground cumin

¾ tsp unrefined salt

¾ tsp garlic powder

¼ tsp ground coriander or cloves (optional)

¼ tsp black pepper

2 tbsp (30g) avocado oil mayo

1 tbsp (14g) lemon juice (about ¼ lemon)


Yellow Rice:

1 ½ tbsp (22g) grass-fed butter or ghee

¼ small onion, finely diced

1 tsp unrefined salt

¾ tsp ground turmeric

¼ tsp smoked paprika

¼ tsp ground cumin

1 cup (180g) basmati or jasmine rice

1 ½ cups (360g) chicken or vegetable broth (can sub water)


Tzatziki sauce:

1 seedless cucumber, grated and drained well

1 ½ cups (340g) organic plain Greek yogurt

2 tbsp extra-virgin olive oil

2 tbsp fresh dill, chopped (or 2 tsp dried dill)

1 tbsp lemon juice or white wine vinegar

2 cloves garlic, minced (or ½ tsp garlic powder)

½ tsp unrefined salt

¼ tsp black pepper


Optional:

Shredded organic lettuce

Diced organic tomato

Pita


Instructions:

1. Prepare the chicken marinade by combining all the chicken ingredients together until well incorporated. Make sure the chicken is coated well on all sides

2. Allow to marinate for at least 20-30 minutes, but ideally 4-16 hours

3. Preheat a large skillet over medium-high heat and preheat an instant pot on the sauté function. Meanwhile, prepare your tzatziki sauce by whisking all the ingredients together in a small mixing bowl. Set aside

4. Once preheated, add your chicken to the skillet and cook until browned and cooked through. When finished, set aside to rest. Meanwhile, add all the yellow rice ingredients (besides the rice and chicken broth/water) to the preheated instant pot. Cook for 2-3 minutes, or until the onion has softened and has developed some color. Then, add the rice and cook for another 1-2 minutes. Then, add your broth/water and seal the lid. Make sure the pressure valve is closed, then select the rice function. Once finished cooking, release the pressure from the instant pot

5. Finally, cut your chicken into pieces and serve with your yellow rice, tzatziki sauce, diced tomato, lettuce, and pita! Enjoy!
