Peanut Butter Cup Rice Krispies



I honestly don’t even know what to say other than these are absolutely (not unexpectedly) delicious 🤤 These make a perfect sweet snack or dessert and are SUPER easy to make! They store well in the fridge and can even be frozen, so don’t be afraid to make a bunch! (trust me, they won’t last long) 😉


Ingredients:

1 cup (240g) dark chocolate chips

1 1/3 cup (40g) crispy rice cereal of choice

¼ cup (56g) organic peanut butter

1 tsp (5g) unrefined coconut oil

Optional topping: organic cacao nibs


Instructions:

1. In a saucepan over medium-low heat, add the coconut oil and chocolate chips. Stir until fully melted, then mix well until combined and smooth. Remove from heat and allow to cool slightly

2. In a mixing bowl, add the crispy rice and chocolate mixture. Mix until well combined

3. Into a muffin/cupcake tin, press an even layer of the chocolate/crispy rice mixture into the bottom of the muffin slot. Next, add about a teaspoon of peanut butter on top in the center, then cover with more of the chocolate/crispy rice mixture. Top with cacao nibs, if desired

4. Repeat until the mixture is gone, then place in the freezer for about 30 minutes to harden. Store in the fridge for up to a week or freeze for up to 3 months! Enjoy!
