Peanut Butter Banana Overnight Oats



Need a quick, on-the-go breakfast? Or maybe you’re just too tired to feel like cooking breakfast (it happens 🤷‍♂️) Either way, this recipe can be a lifesaver! I love how balanced this breakfast is, and the peanut butter/banana combo just hits the spot 👌 Feel free to get creative with any toppings or mix-ins you like, you really can’t mess this up! This recipe will make ~4 servings, so you can have breakfast ready to go all week long 🙌


Ingredients:


Overnight oat base:

1 can @traderjoes (13.5oz) full fat coconut milk (can use light coconut milk, cows milk, or any milk alternative)

¾ cup water (6oz)

1 ½ cups @terrasoul organic rolled oats (150g)

15g @terrasoul organic chia seeds

15g @terrasoul organic flax seeds (ground)

30g @foursigmatic vanilla protein (can sub any vanilla or unflavored protein powder of choice)

15g honey or maple syrup

½ tsp pure vanilla extract

¼ tsp @redmondrealsalt unrefined salt


Mix-ins:

300g @chiquitabanana banana, sliced (about 3 bananas)

120g organic @pbfit.official mixed with 120g water (or use 1-2 tbsp natural peanut butter)


Instructions:

1. Mix all overnight oat base ingredients and allow to chill in the refrigerator overnight, or at least 3-4 hours.

2. Remove the overnight oat base from the fridge, mix in and top with banana slices and peanut butter mixture, and enjoy!
