PB&J Streusel English Muffins



Wanted to try out a twist with the classic PB&J combo, so I decided why not add some chia seeds and a streusel topping?🤪 I mean, when does streusel not make something better?? If you’re in search of a balanced and fulfilling breakfast (or even snack), these guys will be perfect 👌


Ingredients:


Muffin:

1 @daveskillerbread English muffin (can sub any bread you like)

32g organic @pbfit.official mixed with 32g water (can sub any peanut butter)

16g @traderjoes organic superfruit spread

8g @terrasoul organic chia seeds

1-2oz water (to hydrate chia seeds)


Streusel topping:

10g @kerrygoldusa unsalted butter

10g @bobsredmill gluten-free 1-1 flour

10g @terrasoul organic oats (blended into oat flour)

5g @wholeearthsweetener (can sub any other sugar/sweetener)

Dash of pure vanilla extract (optional)

Pinch of @redmondrealsalt (optional)


Instructions:

  1. If chia 'slurry' (chia seeds and water) is not prepared and thickened to a jam-like consistency, prepare that first by mixing the two and allow to sit for 20-30 minutes

  2. In a small saucepan or skillet over medium-low heat, add the butter and flour and stir to combine. Then, immediately add oats and sugar and combine until clumps begin to form, then remove from heat

  3. Toast your English muffin/bread until crisp

  4. Stir in your chia seed slurry with the superfruit spread to create a chia jam

  5. Spread the peanut butter, then the jam, and finally top the English muffin/bread with the streusel topping

  6. Place under oven broiler or in a toaster oven until the streusel turns golden brown

  7. Enjoy!
