Low-Carb Chocolate Pudding



Delicious for a dessert or snack, this pudding is better-for-you and can be made in batches for easy prep! This recipe makes 2-3 servings, but just double or triple it to make larger batches. Who doesn’t love chocolate pudding? 😋


Ingredients:

2 tsp (8g) grass-fed gelatin

4oz (120g) milk of choice, to mix with gelatin

12oz (360g) milk of choice, for the chocolate mixture

¼ cup (48g) sweetener of choice

¼ cup (24g) raw cocoa powder

1 tsp vanilla extract

¼ tsp unrefined salt


Instructions:

1. In a medium mixing bowl, combine the gelatin and 4 ounces of milk. Mix until no lumps remain

2. In a saucepot, combine the sweetener, cacao, vanilla, salt, and remaining milk over medium heat. Whisk until smooth and the mixture begins to simmer

3. Add in the gelatin mixture and stir well to combine. Continue to stir for another minute or two, then transfer the liquid to a heat-safe bowl

4. Set the bowl (uncovered) in the fridge for about 15 minutes. After 15 minutes, cover it and refrigerate until fully thickened. Then, serve and enjoy!
