Perhaps one of my favorite dishes of all time.... mushroom risotto đ Although it does take some time to make, the payoff is WELL worth it. Plus, this recipe will get you at least 3 servings, so you might even have some delicious leftovers! đ´
Ingredients:
Beef:
2-3 lbs grass-fed beef short ribs or roast
1 tbsp avocado oil (for browning the beef)
Salt, pepper, garlic, oregano, and thyme
½ cup red wine or water (to deglaze)
4 cups beef broth (can sub water or chicken broth)
1-2 bay leaves (optional)
Mushroom Risotto:
4 cups low-sodium chicken broth
1 1/2 cups arborio rice
1 tbsp extra virgin olive oil (or avocado oil)
1 small onion (or 3 shallots), peeled and chopped
1 or 2 8-ounce cartons of cremini (or baby bella) mushrooms, stemmed and sliced
Salt, pepper, and garlic powder
1/2 cup white wine (optional)
1/4 cup grated parmesan or pecorino romano cheese
1 tbsp grass-fed butter (optional)
