Fiesta Egg Bites



Tired of eating plain jane eggs and want to spice things up a little bit? These egg bites are a tasty and portable breakfast that packs some amazing flavor 😋 Don’t be afraid to make a big batch and keep them in your fridge or freezer! They won’t stay there long 😉


Ingredients:

4oz @applegate bacon, cooked and chopped

2oz @horizonorganic organic monterey jack, shredded

6 @vitalfarms pasture-raised eggs

1 red bell pepper, diced (can use any variety)

¼ sweet onion, diced

½ tsp @redmondrealsalt unrefined salt

¼ tsp pepper and garlic powder

Salsa, for serving (optional)


Instructions:

1. Preheat oven to 350F

2. Add eggs, salt, pepper, and garlic powder to a mixing bowl or measuring cup and whisk to combine

3 Disperse egg mixture into a muffin pan, filling each muffin slot until about half full until you run out of egg mixture

4. Disperse the diced onion and pepper among the filled muffin slots

5. Disperse the bacon among the filled muffin slots

6. Disperse the cheese among the filled muffin slots as the top layer

7. Bake a 350F for 20-25, or until golden and cooked through

8. Enjoy!
