Crispy Peanut Butter Protein Bars



When it comes to healthy and delicious snacks, it doesn’t get much easier and more delicious than this 😋 With creamy peanut butter, a touch of chocolate, and just the right amount of saltiness to bring it all together, you’ll be in for a treat 🤩


Ingredients:


Base:

2 cups organic quick oats @bobsredmill

1 cup organic puffed cereal (brown rice, millet, quinoa, etc.) @onedegreeorganics

1 cup organic creamy peanut butter (can sub any nut/seed butter) @onceagainnutbutter

1/3 cup unsweetened shredded coconut (can sub more cereal)

1/3 cup organic ground flaxseed @nutiva

1/3 cup raw honey or pure maple syrup

2 tbsp organic chia seeds @nutiva

2 tbsp unrefined coconut oil or grass-fed butter, melted

2 tbsp water or milk of choice

1 ½ tsp vanilla extract

¼ tsp unrefined salt


Chocolate topping:

¼ cup (60g) dark chocolate chips

1 tsp unrefined coconut oil


Instructions:

1. In a large mixing bowl, combine your oats, cereal, coconut, flaxseed, and chia seed. Mix to combine, then add the remaining ingredients for the base. Mix again until everything sticks together and is thoroughly combined

2. Line a dish with parchment or wax paper, then press and spread the mixture evenly into the dish. Place the dish in the freezer while you prepare the chocolate topping

3. Heat a small saucepan over medium-low heat, then add the chocolate and coconut oil. Stir until fully melted, then remove from the heat

4. Remove the dish from the freezer and drizzle your chocolate mixture over top of the bars. Place the dish back in the freezer until everything has hardened, then cut and enjoy! Store the bars in the fridge for up to a week or freeze for up to 3 months!
