Chocolate Peanut Butter Cups



With a classic combination like chocolate and peanut butter, you can’t help but crave it from time to time 🤤 But many companies add several unnecessary ingredients that are anything but beneficial to your health. If you want to have your *peanut butter cup* and eat it too, give this recipe a go! 🙌


Ingredients:


Peanut butter filling:

144g @crazyrichardspb creamy peanut butter

25g @terrasoul organic coconut flour

25g pure maple syrup


Chocolate:

275g @traderjoes 72% dark chocolate or semi-sweet chocolate (about 90g for the base, then remainder to fill)

8g @nutiva organic coconut oil

1/4 tsp @redmondrealsalt salt

15g @lakanto monk fruit, stevia, cane sugar, or coconut sugar (optional)


Directions:

  1. Heat all chocolate ingredients in a double boiler, saucepan, or microwave until melted. Disperse about ⅓ of the chocolate mixture among 9 cupcake liners and allow to harden in the freezer

  2. Mix all peanut butter filling ingredients into a ball. Divide into nine 20g balls and press to flatten slightly (until just smaller than the width of the bottom chocolate layer you just poured)

  3. Take the chocolate out of the freezer and place peanut butter filling on top of each chocolate mold

  4. Disperse the remaining chocolate into the cupcake liners to fully cover the peanut butter filling

  5. Allow to harden in the freezer for at least 15-20 minutes, then enjoy!
