Pumpkin Muffins (Gluten-Free)



The pumpkin cravings hit hard this time of year, but these muffins are absolutely spook-tacular 🤤


Ingredients:

  • 2 cups (212g) homemade superfood pancake mix (can sub your favorite gluten-free pancake mix)

  • 1 (15oz) can pure pumpkin puree

  • 1/3 cup (64g) coconut, date, or maple sugar

  • 1/4 cup (48g) allulose, monk fruit, or stevia (can sub more sugar)

  • 1/8 cup (30g) unrefined coconut oil, melted (can sub avocado oil)

  • 1 pasture-raised egg, whisked

  • 2 tsp pumpkin pie spice

  • 1 ½ tsp vanilla extract

  • ½ tsp cinnamon

  • ½ tsp unrefined salt

Instructions:

  1. Preheat your oven to 350F

  2. Mix all the ingredients in a large mixing bowl until well combined

  3. Transfer the mixture to a greased 12-slot muffin pan

  4. Bake for 25-30 minutes, or until a toothpick comes out clean

  5. Allow to cool and enjoy!
