The pumpkin cravings hit hard this time of year, but these muffins are absolutely spook-tacular 🤤
Ingredients:
2 cups (212g) homemade superfood pancake mix (can sub your favorite gluten-free pancake mix)
1 (15oz) can pure pumpkin puree
1/3 cup (64g) coconut, date, or maple sugar
1/4 cup (48g) allulose, monk fruit, or stevia (can sub more sugar)
1/8 cup (30g) unrefined coconut oil, melted (can sub avocado oil)
1 pasture-raised egg, whisked
2 tsp pumpkin pie spice
1 ½ tsp vanilla extract
½ tsp cinnamon
½ tsp unrefined salt
Instructions:
Preheat your oven to 350F
Mix all the ingredients in a large mixing bowl until well combined
Transfer the mixture to a greased 12-slot muffin pan
Bake for 25-30 minutes, or until a toothpick comes out clean
Allow to cool and enjoy!
