Homemade Avocado Oil Mayo



Mayo seems to always get a bad rap, but mayo done right is actually a good thing! Unlike most commercial mayo, which is loaded with inflammatory/highly-processed oils and other sketchy ingredients, homemade avocado or olive oil mayonnaise is loaded with healthy fats and lutein (and even enhances nutrient absorption) 🙌 If you’re a mayo fan and want to have a healthy choice, this recipe is for you!


Ingredients:

1 large @vitalfarms egg yolk (at room temperature)

1 cup @chosenfoods avocado oil

2 tsp lemon juice or white wine vinegar

1 tsp Dijon mustard

@redmondrealsalt unrefined salt, to taste


Instructions:

1. Remove 1 egg from your fridge. Make sure it is room temperature before adding any of the ingredients

2. Add the egg yolk and Dijon mustard to a food processor

3. Process until incorporated. While continuing to process, very slowly drizzle in the oil until it has all been added and emulsified

4. Add the lemon juice and salt into your mayo and mix until fully incorporated. Enjoy!
